In honour of International Chef's Day, we’re excited to introduce a limited-time menu crafted by our talented Chefs to celebrate the flavours of summer. Each dish reflects the creativity and passion of the chefs behind it - available à la carte exclusively at participating properties.

Try Chef's Thai curry seabass recipe
Ingredients
- 180g fish
- One potato
- Half cup of frozen peas
Sauce
- Butter
- Onions
- Garlic
- Thyme
- Thai curry paste
- Cream 100 ml
Method
- Pan fry Seabass until skin is crispy and finish it off in the oven for 5 minutes
- Cut potatoes in thinly slices and deep fry until crispy
- Blanche frozen peas and set aside
Capers sauce
- Fry capers for 2 minutes
- Reduce cream
- Add capers to the cream
- Season
Sauce
- Melt butter and add onions, garlic fry until soft for 2 minutes
- Add paste fry for until all spices blended
- Add cream and let it reduce until cooked and thick..
- Season with salt and pepper
